Teff originates from Ethiopia and is one of the earliest crops cultivated for food. These tiny grains have a mild, nutty flavour and slightly crunchy texture once cooked. It is delicious cooked as porridge or as a starch alternative.
Serving and Usage suggestions
For porridge: Add 1 1/2 cups water and a pinch of salt to 1/2 cup teff. Stir and cover. Bring to the boil, then simmer for 15-20 minutes. Suggestion: Add milk, syrup, cinnamon and chopped nuts. For a starch alternative: Add 1 tbsp oil to above recipe before cooking.
